Not only located in the heart of Pennsylvania (Carlisle, PA to be exact), but Rillo's is a restaurant with a big heart. Family owned and operated since 1960 Rillo's has seen four generations of family members pass through its doors. Rillo's is a restaurant based in tradition whose origin actually started in Johnstown, PA when the Rillo family first immigrated to America from Italy in 1920. There, they opened a small general store that became the "Fariway" restaurant. Moving to Carlisle in 1969 the Rillo family opened a steak and spaghetti restaurant that has grown to what is now Rillo's Restaurant, offering a diverse menu from classic Italian food to fresh seafood and fusion style dishes.

At the head of it all is Joe Rillo, whose mother and father opened the operation. He credits the loyalty of his staff to what has made Rillo's a success. The longevity of his staff helps with consistency of food and service.

"We have many long term employees. The lady who prepares the salads is 82 and has been here for over 20 years. We have a pasta chef who has also been here over 20 years as well as many retired employees who spent their career with us," said Joe Rillo, owner and chef.

Rillo's is known for its personal service, willingness to accommodate special needs and Rillo's Style cuisine. Mr. Rillo describes Rillo's Style as "food made with the highest quality of ingredients and cooked to order."

Mr. Rillo has been using ChefTec since 1999 and currently has a network version of ChefTec Plus.

"ChefTec has been a part of our kitchen for a long time. We have different people entering data so it is convenient to have the software networked."

Mr. Rillo touts the recipe writing features. By entering his recipes in ChefTec he can print them off in various ways for use in the kitchen or in the office. Also, by having his recipes centralized modification is a snap.

"Rillo's recently installed a POS system, which will interface with ChefTec for perpetual inventory and sales analysis. He is also planning on using ChefTec BarCoder PDA to help with physical inventory taking. Mr. Rillo's goal is to have the entire operation fully integrated."
